Abstract

The possibility of seaweed using in vegetable salads recipes and marinades to increase their biological value has been investigated. The mineral and vitamin composition of Laminaria and Cystoseira, that are extracted in the Black sea, have been researched and analyzed. Comparative vitamin and mineral composition of Laminaria and Cystoseira has been shown. It has been settled that the use of dried seaweed in boiled form, in the production of vegetable salads and marinades is reasonable and allows to compensate for the lack of biologically valuable micronutrients needed in humans for iodine deficiency prevention and for normal thyroid function.
